Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Cream butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add wet ingredients: Beat in the egg and vanilla extract. Gradually mix in the dry ingredients until just combined.
- Combine mixtures: Fold in the grated carrots, oats, and nuts or raisins if using. Scoop tablespoon-sized portions of dough onto the prepared baking sheets.
