Ingredients
Scale
Cake Batter
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups finely grated carrots
- 1/2 cup chopped walnuts
Cream Cheese Layer
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Pan and Oven: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, ensuring easy removal of the bars later.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt until fully blended.
- Combine Wet Ingredients: In another bowl, combine the melted unsalted butter with brown sugar and granulated sugar, mixing thoroughly until smooth. Beat in the eggs one at a time, then add the vanilla extract until the mixture is well incorporated.
- Form the Batter: Gradually stir the dry ingredient mixture into the wet ingredients until just combined, being careful not to overmix. Fold in the finely grated carrots and chopped walnuts gently to distribute evenly.
- Layer Batter: Spread most of the carrot cake batter evenly into the prepared baking pan, reserving about 1/2 cup of batter to use later.
- Prepare Cream Cheese Mixture: In a separate bowl, beat together the softened cream cheese, granulated sugar, egg yolk, and vanilla extract until the mixture is smooth and creamy without lumps.
- Assemble Bars: Spread the cream cheese mixture evenly over the batter layer in the baking pan. Then, drop spoonfuls of the reserved carrot cake batter on top of the cream cheese layer and gently swirl with a knife or skewer to create a marbled effect.
- Bake: Place the pan in the preheated oven and bake for 30 to 35 minutes. The bars should be set in the center and lightly golden on top when done.
- Cool and Serve: Remove from the oven and allow the bars to cool completely in the pan. Once cooled, lift them out using the parchment paper edges and slice into 9 bars for serving.
Notes
- For extra flavor and texture, consider adding raisins or shredded coconut into the batter along with the carrots and walnuts.
- To maintain freshness and texture, store the bars in the refrigerator.
- Allow the bars to come to room temperature before serving for a softer, more tender bite.
