Main Ingredients:

  • 1 medium head of cauliflower (about 4 cups riced)
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions

Additional Ingredients:

  • 1/3 cup breadcrumbs (or almond flour for low-carb)
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

Instructions

  1. Cut and Prep Cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Steam or microwave the cauliflower rice for 5 minutes until tender, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
  2. Mix Ingredients: In a large mixing bowl, combine the cauliflower rice, eggs, cheddar cheese, Parmesan, green onions, breadcrumbs, garlic powder, salt, and pepper. Mix until well combined.
  3. Form Patties: Scoop about 1/4 cup of the mixture and form into a patty. Repeat with the remaining mixture.
  4. Cook Patties: Heat olive oil in a non-stick skillet over medium heat. Cook the patties for 3–4 minutes per side, or until golden brown and crispy.
  5. Serve: Transfer to a paper towel-lined plate and serve warm.
