- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 cup cooked quinoa or rice
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomatoes
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup hummus
- 2 tablespoons tahini sauce or dressing

Instructions
- Preheat the Oven: Preheat the oven to 425°F (220°C).
- Roast Cauliflower: Toss cauliflower with olive oil, spices, salt, and pepper. Roast for 25–30 minutes until golden and tender.
- Prepare Bowl: Divide quinoa or rice into serving bowls. Top with roasted cauliflower, cucumber, tomatoes, red onion, and parsley.
- Add Dressings: Add a dollop of hummus and drizzle with tahini sauce.
- Serve: Serve with lemon wedges on the side.
