Ingredients
Scale
Roasted Cauliflower
- 1 medium cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
Cilantro Lime Crema
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tablespoon olive oil
- Salt and pepper, to taste
Additional Toppings and Assembly
- Corn or flour tortillas, as needed
- Sliced avocado
- Pickled onions
- Fresh cilantro leaves
- Crumbled feta or cotija cheese (optional, for non-vegan option)
- Hot sauce, optional for extra kick
Instructions
- Prepare the Cauliflower: Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, ground cumin, paprika, chili powder, salt, and pepper until evenly coated.
- Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until the florets are golden brown and crispy on the edges.
- Make Cilantro Lime Crema: While the cauliflower is roasting, combine sour cream or Greek yogurt, chopped cilantro, lime juice, olive oil, salt, and pepper in a blender or food processor. Blend until smooth and creamy. Taste and adjust seasoning by adding more lime juice or salt if desired.
- Warm the Tortillas: Heat a dry skillet over medium heat. Warm tortillas for about 30 seconds on each side until soft and slightly charred.
- Assemble the Tacos: Fill each warmed tortilla with roasted cauliflower and drizzle generously with cilantro lime crema. Add sliced avocado, pickled onions, fresh cilantro leaves, and, if desired, crumbled feta or cotija cheese. Top with hot sauce for an extra kick.
Notes
- You can use either corn or flour tortillas based on your preference.
- For a vegan version, opt for dairy-free yogurt instead of sour cream and omit the cheese.
- Adjust the chili powder amount to control the spiciness level.
- Roasting the cauliflower until crispy enhances the texture and flavor significantly.
- Leftover cilantro lime crema can be stored in the refrigerator for up to 2 days.
