  • 1 tablespoon olive oil

Rice and Cheese Topping:

  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 cup frozen peas and carrots
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Nonstick cooking spray

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish with nonstick spray.
  2. Sauté Onion and Beef: In a large skillet, cook onion in olive oil until soft. Add garlic, then brown the ground beef. Season with salt, pepper, thyme, and paprika.
  3. Add Remaining Ingredients: Stir in the uncooked rice, peas and carrots, and beef broth. Simmer briefly, then transfer to the baking dish.
  4. Bake: Cover with foil and bake for 35 minutes. Uncover, top with cheeses, and bake an additional 10–15 minutes until golden.
  5. Rest and Serve: Let the casserole rest for 5 minutes before serving.
