Rice and Cheese Topping:
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 cup frozen peas and carrots
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- Nonstick cooking spray
Instructions
- Preheat the Oven: Preheat the oven to 375°F and grease a 9×13-inch baking dish with nonstick spray.
- Sauté Onion and Beef: In a large skillet, cook onion in olive oil until soft. Add garlic, then brown the ground beef. Season with salt, pepper, thyme, and paprika.
- Add Remaining Ingredients: Stir in the uncooked rice, peas and carrots, and beef broth. Simmer briefly, then transfer to the baking dish.
- Bake: Cover with foil and bake for 35 minutes. Uncover, top with cheeses, and bake an additional 10–15 minutes until golden.
- Rest and Serve: Let the casserole rest for 5 minutes before serving.

- For extra flavor, consider adding a tablespoon of tomato paste to the ground beef mixture.
