  • 2 cups semisweet chocolate chips

Instructions

  1. Cheesecake Filling: In a medium bowl, beat together cream cheese, powdered sugar, and vanilla until smooth. Scoop teaspoon-sized portions onto a parchment-lined tray and freeze for at least 30 minutes.
  2. Cookie Dough: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla and mix until combined. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients. Fold in the chocolate chips.
  3. Scoop about 2 tablespoons of cookie dough and flatten into a disc. Place a frozen cheesecake ball in the center and wrap the dough around it, sealing completely. Repeat with remaining dough and filling. Place stuffed dough balls on a parchment-lined baking sheet and chill for 15–30 minutes.
  4. Preheat the oven to 350°F (175°C). Bake cookies for 12–14 minutes, or until golden around the edges but still soft in the center. Let cool on the pan for 5 minutes before transferring to a wire rack.
