  • 2 cups red enchilada sauce, divided
  • 8 medium flour tortillas
  • 2 cups shredded Mexican blend cheese
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Sauté the Beef Mixture: In a large skillet, heat olive oil over medium heat. Add onion and cook until softened. Add garlic, then brown the ground beef. Stir in black beans, spices, and 1/2 cup of enchilada sauce.
