Chicken Fritters:
- 1 pound boneless, skinless chicken breasts (finely chopped)
- 2 large eggs
- â…“ cup almond flour (or all-purpose flour)
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 green onions (finely chopped)
- 2 garlic cloves (minced)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons mayonnaise
- 2 tablespoons fresh parsley (chopped)
- 2 tablespoons olive oil (for frying)
Instructions
- Prepare the Chicken Mixture: In a large bowl, mix together the chicken, eggs, flour, mozzarella, Parmesan, green onions, garlic, salt, pepper, paprika, mayonnaise, and parsley until well combined.
- Cook the Fritters: Heat olive oil in a skillet, scoop ¼ cup of the mixture into the skillet, flatten slightly, and cook for 3–4 minutes per side until golden brown and cooked through. Repeat with remaining mixture.
- Serve: Serve warm, optionally with sour cream or a dipping sauce.
Notes
- Chill the mixture for 10–15 minutes before cooking for easier handling.
- You can substitute almond flour with regular flour or breadcrumbs.
- Leftovers store well in the fridge and reheat nicely in a skillet or oven.
