Egg Noodles:
12 ounces,
Cooked and Shredded Chicken Breast:
2 cups,
Olive Oil:
1 tablespoon,
Onion:
1 small, finely chopped,
Frozen Peas and Carrots:
1 cup,
Cream of Chicken Soup:
1 can (10.5 ounces),
Sour Cream:
1/2 cup,
Milk:
1/2 cup,
Garlic Powder:
1/2 teaspoon,
Black Pepper:
1/2 teaspoon,
Salt:
1/2 teaspoon,
Cheddar Cheese:
1 1/2 cups shredded (divided),
Parmesan Cheese:
1/4 cup grated,
Buttery Crackers or Breadcrumbs:
1/2 cup crushed,
Parsley:
chopped for garnish (optional)
Instructions
- Preheat the oven to 375°F and grease a 9×13-inch baking dish.
- In a skillet, sauté onion, add peas and carrots, then mix with noodles, chicken, soup, sour cream, milk, spices, 1 cup cheddar, and Parmesan.
- Pour mixture into baking dish, top with cheese and crackers, bake for 25–30 minutes.
- Rest for 5 minutes before serving. Garnish with parsley if desired.
Cook egg noodles until al dente, drain, and set aside.
Notes
- Rotisserie chicken can be used for convenience.
- Enhance with red bell pepper or mushrooms.
- For a lighter version, use Greek yogurt instead of sour cream.
