Cheesy Corn Fritters Ingredients:
- 1 1/2 cups fresh or frozen corn kernels (thawed if frozen)
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 2 green onions (thinly sliced)
- 2 large eggs
- 1/4 cup milk
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley (optional)
- 2–3 tbsp vegetable oil (for frying)
Instructions
- Mix Ingredients: In a large bowl, combine corn, cheddar cheese, Parmesan, green onions, flour, cornmeal, baking powder, salt, pepper, and parsley.
- Add Wet Ingredients: In a small bowl, whisk eggs and milk, then add to the corn mixture and stir to combine.
- Fry Fritters: Heat oil in a skillet, drop batter by tablespoons, flatten, and cook until golden brown and crispy on both sides.
- Serve: Transfer to a paper towel-lined plate and serve warm with desired toppings.
