Cheese Sauce:
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- 2 cups shredded sharp cheddar cheese
Remaining Ingredients:
- 2 pounds Yukon Gold or russet potatoes, peeled and thinly sliced
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Prepare the cheese sauce: In a saucepan, melt butter, cook onion until soft, add garlic, whisk in flour, then gradually add milk and cream. Season and stir in 1 1/2 cups cheese until melted.
- Layer the potatoes: Arrange half of the potatoes in the dish, top with half of the cheese sauce. Repeat with remaining potatoes and sauce. Sprinkle remaining cheese on top.
- Bake: Cover with foil and bake for 30 minutes. Uncover and bake for another 25–30 minutes until golden and bubbly. Let sit before serving.
Notes
- For a richer flavor, mix cheddar and Gruyère cheese.
