Cheese Sauce:

  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 2 cups shredded sharp cheddar cheese

Remaining Ingredients:

  • 2 pounds Yukon Gold or russet potatoes, peeled and thinly sliced

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Prepare the cheese sauce: In a saucepan, melt butter, cook onion until soft, add garlic, whisk in flour, then gradually add milk and cream. Season and stir in 1 1/2 cups cheese until melted.
  3. Layer the potatoes: Arrange half of the potatoes in the dish, top with half of the cheese sauce. Repeat with remaining potatoes and sauce. Sprinkle remaining cheese on top.
  4. Bake: Cover with foil and bake for 30 minutes. Uncover and bake for another 25–30 minutes until golden and bubbly. Let sit before serving.
