Pasta:

  • 12 ounces pasta (fettuccine or penne)

Chicken & Mushroom Mixture:

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, sliced into strips
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced (cremini or white button)
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon chili flakes (optional)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Cook the Pasta: Boil pasta in salted water until al dente. Drain and set aside.
  2. Cook the Chicken: Season chicken with salt and pepper. Cook in olive oil until golden. Set aside.
  3. Prepare Mushroom Sauce: In the same skillet, cook mushrooms, garlic, thyme, and chili flakes. Add chicken broth and cream. Simmer and add Parmesan.
  4. Combine and Serve: Return chicken to the skillet, add pasta, and toss. Garnish with parsley before serving.

  • You can substitute the cream with half-and-half or a plant-based cream for a lighter option.
