Pasta:

Chicken:

  • 1 pound boneless skinless chicken breast (cut into bite-sized pieces)

Sauce:

  • 2 tablespoons butter
  • 8 ounces cremini or white mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the pasta until al dente. Drain and set aside.
  2. Cook the chicken: Brown and cook the seasoned chicken pieces in olive oil until done. Remove and set aside.
  3. Prepare the sauce: In the same skillet, sauté mushrooms, garlic, then add broth, cream, Parmesan, and seasoning. Simmer until thickened.
  4. Combine and finish: Toss chicken and pasta in the sauce, adjust seasoning, and cook briefly. Serve hot, garnished with parsley.
