Pasta:
- 12 ounces pasta (such as fettuccine or penne)
Chicken:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breast (cut into bite-sized pieces)
Sauce:
- 2 tablespoons butter
- 8 ounces cremini or white mushrooms (sliced)
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Cook the pasta: In a large pot of salted boiling water, cook the pasta until al dente. Drain and set aside.
- Cook the chicken: Brown and cook the seasoned chicken pieces in olive oil until done. Remove and set aside.
- Prepare the sauce: In the same skillet, sauté mushrooms, garlic, then add broth, cream, Parmesan, and seasoning. Simmer until thickened.
- Combine and finish: Toss chicken and pasta in the sauce, adjust seasoning, and cook briefly. Serve hot, garnished with parsley.
