For the Casserole:

  • 4 cups cooked shredded chicken (rotisserie or poached)
  • 1 box (6 oz) stuffing mix (such as Stove Top)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk or chicken broth
  • 1 cup frozen mixed vegetables (optional)
  • 2 tablespoons melted butter
  • Salt and black pepper to taste

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Mix casserole ingredients: In a large bowl, combine cream of chicken soup, sour cream, milk or broth, salt, and pepper. Add cooked chicken and vegetables, if using, and spread mixture in the baking dish.
  3. Prepare stuffing: In a separate bowl, prepare stuffing mix according to package directions or mix dry stuffing with melted butter and hot water. Spread stuffing over the chicken mixture.
