For the Casserole:
- 4 cups cooked shredded chicken (rotisserie or poached)
- 1 box (6 oz) stuffing mix (such as Stove Top)
- 1 can (10.5 oz) cream of chicken soup
- ½ cup sour cream
- ½ cup milk or chicken broth
- 1 cup frozen mixed vegetables (optional)
- 2 tablespoons melted butter
- Salt and black pepper to taste
Instructions
- Preheat oven and prepare baking dish: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Mix casserole ingredients: In a large bowl, combine cream of chicken soup, sour cream, milk or broth, salt, and pepper. Add cooked chicken and vegetables, if using, and spread mixture in the baking dish.
- Prepare stuffing: In a separate bowl, prepare stuffing mix according to package directions or mix dry stuffing with melted butter and hot water. Spread stuffing over the chicken mixture.
- Bake: Bake for 30–35 minutes until hot and bubbly with golden stuffing on top. Let rest before serving.
