  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup heavy cream or half-and-half
  • Juice of 1 lime

For garnish:

  • Chopped fresh cilantro
  • Shredded cheese (optional)

Instructions

  1. Heat olive oil: In a large pot over medium-high heat, add olive oil.
  2. Cook chicken: Add chicken to the pot and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
  3. Sauté vegetables: In the same pot, add bell peppers and onion. Sauté until tender, about 4–5 minutes. Stir in garlic and cook for 1 minute.
  4. Add ingredients: Return cooked chicken to the pot. Add diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring to a boil, then simmer for 15–20 minutes.
  5. Finish soup: Stir in heavy cream and lime juice. Simmer for an additional 2–3 minutes.
  6. Serve: Garnish with cilantro and cheese, if desired, and serve hot.

Notes

  • You can use rotisserie chicken for convenience.
