Ingredients
Scale
For the Gravy:
- 2 cups cooked and shredded or diced chicken
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth (preferably low sodium)
- 1/2 cup milk or heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
For Serving:
- 4 cups mashed potatoes (prepared in advance or store-bought)
- Chopped fresh parsley for garnish (optional)
Instructions
- Making the Gravy: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 to 2 minutes until lightly golden and bubbling. Slowly pour in the chicken broth while whisking continuously to prevent lumps.
- Add the milk, garlic powder, onion powder, and a pinch of salt and pepper. Bring to a simmer and cook for 4 to 5 minutes, or until the gravy thickens.
- Stir in the cooked chicken and reduce heat to low, letting it warm through for about 2 minutes. Taste and adjust seasoning as needed.
- Serving: Spoon the hot chicken gravy generously over warm mashed potatoes and garnish with parsley if desired.
Notes
- For extra flavor, use pan drippings from roasted chicken in place of some of the butter or broth.
- You can also add sautéed mushrooms or peas to the gravy for a heartier meal.
