Chicken Parmesan Lasagna Skillet:
- 1 tablespoon olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- Salt and black pepper to taste
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1½ cups water or chicken broth
- 8 lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup ricotta cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil and cook chicken: Heat olive oil in a large skillet, add chicken, season, and cook until browned.
- Add garlic and sauce: Add garlic, then stir in marinara sauce, water, lasagna noodles, and Italian seasoning.
- Simmer: Cover and simmer until noodles are tender.
- Add cheeses: Stir in half of the mozzarella and Parmesan, dollop ricotta, sprinkle remaining cheeses, and melt.
- Garnish: Garnish with basil or parsley before serving.
