For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 4 cloves garlic, minced
For the Puttanesca Sauce:
- 1 can (14.5 ounces) diced tomatoes
- ½ cup kalamata olives, pitted and halved
- 2 tablespoons capers, drained
- ¼ teaspoon crushed red pepper flakes
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup chopped fresh parsley (optional)
- 2 tablespoons tomato paste
Instructions
- Season the chicken: Season the chicken breasts with salt and pepper.
- Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
- Saute aromatics: In the same skillet, sauté onion until softened, then add garlic and cook for 1 minute. Stir in tomato paste and cook for another minute.
- Add remaining ingredients: Stir in diced tomatoes, olives, capers, red pepper flakes, oregano, salt, and pepper. Return chicken to the skillet.
- Simmer: Cover and simmer for 15–20 minutes until chicken is cooked through.
- Garnish and serve: Garnish with parsley before serving.
