  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

For the Puttanesca Sauce:

  • 1 can (14.5 ounces) diced tomatoes
  • ½ cup kalamata olives, pitted and halved
  • 2 tablespoons capers, drained
  • ¼ teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley (optional)
  • 2 tablespoons tomato paste

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper.
  2. Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. Saute aromatics: In the same skillet, sauté onion until softened, then add garlic and cook for 1 minute. Stir in tomato paste and cook for another minute.
  4. Add remaining ingredients: Stir in diced tomatoes, olives, capers, red pepper flakes, oregano, salt, and pepper. Return chicken to the skillet.
  5. Simmer: Cover and simmer for 15–20 minutes until chicken is cooked through.
  6. Garnish and serve: Garnish with parsley before serving.
