For the Garlic Parmesan Rice:

  • 2 1/4 cups chicken broth
  • 1/3 cup grated Parmesan cheese

For the Chicken Scampi:

  • 1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter (divided)
  • 4 garlic cloves (minced)
  • 1/2 cup dry white wine (or chicken broth)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and black pepper to taste
  • 1 tablespoon chopped parsley

Instructions

  1. Prepare the Garlic Parmesan Rice: In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add minced garlic and cook for 1 minute. Stir in the rice and toast for 2–3 minutes. Add chicken broth, bring to a boil, then cover and simmer for 18–20 minutes. Stir in Parmesan cheese.
  2. Cook the Chicken Scampi: Season chicken with salt and pepper, coat with flour. Cook chicken in olive oil and 1 tablespoon butter until golden. Remove chicken. Melt remaining butter in the skillet, add garlic, then deglaze with wine. Stir in lemon juice and red pepper flakes. Return chicken to the pan, toss to coat.
  3. Serve: Sprinkle with parsley and serve chicken scampi over garlic Parmesan rice.
