Description

These Chicken Spring Rolls are a fresh and healthy appetizer option that requires no cooking. Filled with shredded chicken, crunchy vegetables, and herbs, these Asian-inspired rolls are wrapped in rice paper and served with your choice of dipping sauce.

Ingredients:

  • 1 cup cooked chicken breast (shredded)
  • 1 cup shredded carrots
  • 1 cup shredded cabbage or coleslaw mix
  • ½ red bell pepper (thinly sliced)
  • ¼ cup fresh cilantro or mint leaves
  • ¼ cup green onions (sliced)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 8–10 rice paper wrappers
  • warm water for soaking
  • optional dipping sauces (peanut sauce, hoisin, or sweet chili)

Instructions

  1. In a medium bowl, combine the shredded chicken, carrots, cabbage, red bell pepper, cilantro or mint, green onions, soy sauce, and sesame oil. Toss gently to mix. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 10–15 seconds, until just soft and pliable. Lay it flat on a clean surface or damp towel.
  2. Spoon about 2–3 tablespoons of the filling mixture near the bottom third of the wrapper. Fold the sides over the filling, then roll tightly from the bottom up like a burrito. Repeat with remaining wrappers and filling.
  3. Serve immediately with your choice of dipping sauce.

  • For extra crunch, add thin rice noodles or chopped peanuts to the filling.
  • These rolls are best fresh but can be stored in the fridge for a few hours wrapped in damp paper towels and plastic wrap.
