For the Chicken:
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons soy sauce, divided
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil, divided
For the Stir Fry:
- 2 medium zucchini, halved lengthwise and sliced into half-moons
- 1 red bell pepper, sliced
- 3 green onions, sliced
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup chicken broth
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- Salt and black pepper to taste
- Sesame seeds for garnish
Instructions
- Prepare the Chicken: In a bowl, combine chicken with 1 tablespoon soy sauce and cornstarch. Cook in oil until golden. Set aside.
- Stir Fry: Cook zucchini, bell pepper, green onions, garlic, and ginger. Add chicken back. Mix broth, soy sauce, oyster sauce, hoisin, sesame oil. Pour over, cook until thickened.
- Finish: Season with salt and pepper. Garnish with sesame seeds. Serve over rice or noodles.
Notes
- For a spicier version, add 1–2 teaspoons of chili garlic sauce to the stir-fry sauce.
- You can also swap zucchini for yellow squash or add mushrooms for extra veggies.
