For the Chili:
- 1 lb ground beef
- 1 small onion, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
For the Chips:
- 1 bag tortilla chips
- 2 cups shredded cheddar cheese
- 1/2 cup sliced jalapenos
- 1/4 cup chopped fresh cilantro
Instructions
- Cook the Chili: In a large skillet, brown the ground beef over medium heat. Add the diced onion and cook until softened.
- Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Simmer for 15-20 minutes.
- Assemble the Chips: Preheat the oven to 350°F (175°C). Arrange the tortilla chips on a baking sheet.
- Spoon the chili over the chips and sprinkle with shredded cheddar cheese.
- Top with sliced jalapenos.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped cilantro.
