- 1 tbsp olive oil
Seasonings:
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 red chili pepper, finely chopped (or 1 tsp chili flakes)

- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Additional Ingredients:
- 1 (14.5 oz) can diced tomatoes
- 1/4 cup beef broth
- 8 small flour or corn tortillas
- 1 cup shredded lettuce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup diced tomatoes or salsa
- 1/4 cup sour cream
- Fresh cilantro and lime wedges for garnish
Instructions
- Heat olive oil: In a large skillet, heat olive oil over medium heat.
- Cook onion and garlic: Add diced onion and minced garlic, cook until softened.
- Add ground beef: Stir in ground beef and cook until browned, breaking it up with a spoon.
- Season the beef: Add chili pepper, chili powder, cumin, smoked paprika, salt, and pepper.
- Simmer: Stir in diced tomatoes and beef broth, simmer until thickened.
- Prepare tortillas: Warm tortillas in a skillet or microwave.
