  • 1 tbsp olive oil

Seasonings:

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 red chili pepper, finely chopped (or 1 tsp chili flakes)

  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Additional Ingredients:

  • 1 (14.5 oz) can diced tomatoes
  • 1/4 cup beef broth
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced tomatoes or salsa
  • 1/4 cup sour cream
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Heat olive oil: In a large skillet, heat olive oil over medium heat.
  2. Cook onion and garlic: Add diced onion and minced garlic, cook until softened.
  3. Add ground beef: Stir in ground beef and cook until browned, breaking it up with a spoon.
  4. Season the beef: Add chili pepper, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Simmer: Stir in diced tomatoes and beef broth, simmer until thickened.
  6. Prepare tortillas: Warm tortillas in a skillet or microwave.
