For the Beef:

  • 1/2 lb beef sirloin or flank steak (thinly sliced)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon Shaoxing wine (optional)
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon white pepper
  • 1 tablespoon vegetable oil

For the Eggs:

  • 4 large eggs
  • 2 green onions (chopped)
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

  1. Marinate the Beef: In a bowl, combine sliced beef with soy sauce, oyster sauce, Shaoxing wine, cornstarch, and white pepper. Marinate for 10–15 minutes.
  2. Prepare the Eggs: Beat eggs with salt. Heat oil in a skillet, scramble eggs until just set. Remove and set aside.
  3. Cook the Beef: Stir-fry garlic and marinated beef until browned. Add eggs back to the pan, fold together. Cook for 30 seconds.
  4. Serve: Garnish with green onions and serve with rice.
