Instructions

  1. Prepare Ingredients: Ensure the jasmine rice is cooked and cooled, preferably leftover from the previous day for better texture. Dice the chicken breast, chop the carrots, mince the garlic, and slice the green onions to have all ingredients ready.
  2. Cook Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and cook for 5-7 minutes until it turns golden brown and is cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables: Add the remaining tablespoon of vegetable oil to the skillet. Sauté the minced garlic and diced carrots for 2-3 minutes until the carrots start to soften. Then add the frozen peas and cook for an additional 2 minutes to heat through.
  4. Scramble Eggs: Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs gently until fully cooked, then mix them thoroughly with the sautéed vegetables.
  5. Combine Ingredients: Return the cooked chicken to the skillet and add the cooked jasmine rice. Stir all ingredients together ensuring everything is combined evenly.
  6. Season and Stir-Fry: Pour soy sauce and sesame oil over the rice mixture. Stir well to coat the rice evenly with the sauces. Adjust seasoning by adding salt and pepper to taste. Continue stir-frying for another 3-5 minutes to heat through and meld flavors.
