  • 2 tablespoons vegetable oil

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, honey, and cornstarch slurry. Set aside.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a skillet. Cook chicken until browned. Remove and set aside.
  3. Stir-Fry Vegetables: In the same pan, add remaining oil. Stir-fry garlic, ginger, and green onions. Add bell pepper and snow peas; cook until tender.
  4. Combine and Serve: Return chicken to the pan, pour in the sauce, and toss. Cook until thickened. Fold in mango and cook briefly. Serve over rice or noodles.
