For the Skewers:
- 1 1/2 lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
- 1 fresh pineapple, cut into bite-sized chunks
- 2 tablespoons olive oil
- 2 tablespoons chipotle peppers in adobo sauce, finely minced
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon smoked paprika
- Salt and black pepper to taste

For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- Juice of 1/2 lime
Instructions
- Prepare the Chicken: Marinate chicken cubes in a mixture of olive oil, chipotle peppers, honey, lime juice, smoked paprika, salt, and pepper for at least 30 minutes.
- Grill the Skewers: Thread marinated chicken and pineapple onto skewers. Grill for 8–10 minutes until cooked through.
- Make the Bang Bang Sauce: Mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
- Serve: Drizzle skewers with bang bang sauce and enjoy!
Notes
- For extra smoky flavor, grill pineapple separately before adding to skewers.
- You can adjust the heat of the sauce by adding more or less sriracha.
