For the Pie:
- 1 pre-baked 9-inch chocolate cookie crust (store-bought or homemade)
- 1 can (21 oz) cherry pie filling
For the Chocolate Ganache:
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
For the Cream Cheese Layer:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping or whipped cream
For Garnish:
- Chocolate shavings or curls for garnish (optional)
Instructions
- Prepare the Ganache: Heat the heavy cream in a saucepan until simmering. Pour over chocolate chips, let sit, then stir until smooth.
- Assemble the Pie: Spread half of the ganache in the crust, chill. Beat cream cheese, sugar, and vanilla until smooth. Fold in whipped topping. Spread over ganache. Top with cherry pie filling, drizzle with remaining ganache, garnish with chocolate shavings. Chill.
Notes
- Try dark chocolate chips for a richer flavor or add almond extract for a cherry-almond variation.
