Wet Ingredients:

  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely shredded zucchini (moisture squeezed out)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a medium bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Prepare Wet Mixture: In a large bowl, whisk eggs, vegetable oil, granulated sugar, brown sugar, and vanilla until smooth. Stir in zucchini.
  4. Combine & Bake: Gradually fold dry ingredients into wet mixture, then gently stir in chocolate chips. Pour batter into loaf pan and bake for 50–60 minutes. Cool before slicing.

Notes

  • Remember to squeeze excess water from zucchini.
  • Try using half whole wheat flour for a heartier texture.
  • Mini chocolate chips are a great alternative.
