For the crust:

  • 1 1/2 cups chocolate cookie crumbs (such as Oreos)
  • 1/4 cup granulated sugar

For the filling:

  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 8 ounces semisweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

For the topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Make the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine the chocolate cookie crumbs and sugar. Stir in the melted butter until well mixed. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, then set aside to cool.
  2. Make the filling: In a medium saucepan, whisk together the heavy cream, milk, sugar, egg yolks, cornstarch, and salt. Cook over medium heat, whisking constantly, until the mixture thickens and begins to boil, about 5-7 minutes.
  3. Once the filling thickens, remove from heat and immediately whisk in the chopped chocolate, butter, and vanilla extract until smooth.
  4. Pour the chocolate filling into the cooled crust. Use a spatula to smooth the top. Allow the pie to cool to room temperature, then refrigerate for at least 4 hours, or until fully chilled.
  5. Make the topping: In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  6. Once the pie is chilled, spread the whipped cream on top of the chocolate filling.
  7. Slice and serve!

Notes

  • For extra flavor, you can sprinkle grated chocolate or cocoa powder on top of the whipped cream.
  • The pie can be made a day ahead and kept in the refrigerator.
  • If you prefer a smoother texture, strain the filling before pouring it into the crust to remove any lumps.
