Cookies:
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon strawberry extract (optional for stronger flavor)
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries (crushed)
Chocolate Coating:
- 6 ounces semi-sweet chocolate (chopped or chips)
- 1 teaspoon coconut oil or vegetable oil (for melting chocolate)
- sprinkles or crushed freeze-dried strawberries for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Prepare the cookie dough: Cream the butter and sugars until light and fluffy. Add the egg, vanilla, and strawberry extract. Combine the dry ingredients separately, then mix into the wet mixture. Fold in the crushed strawberries.
- Bake the cookies: Scoop dough onto the baking sheet and bake for 10–12 minutes until lightly golden. Cool on a wire rack.
- Coat with chocolate: Melt chocolate and coconut oil, dip half of each cookie, and garnish with sprinkles or strawberry crumbs. Allow the chocolate to set before serving.
Notes
- Freeze-dried strawberries provide the best flavor and texture.
- Avoid using fresh strawberries in the dough.
- For a festive touch, use pink or red sprinkles for garnish.
