For the topping (optional):

  • 1/2 cup semisweet chocolate chips (for melting)
  • 1 tablespoon coconut oil or butter (for melting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg, vanilla extract, and peppermint extract, and mix until smooth and fully combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, mixing until just combined.
  6. Stir in the semisweet chocolate chips and mint chips (if using).
  7. Shape the cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them about 2 inches apart on the prepared baking sheets. Flatten each cookie slightly with the back of a spoon or your fingers.
  8. Bake for 8-10 minutes, or until the cookies are set around the edges but still soft in the center. Allow them to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. Optional topping: In a small microwave-safe bowl, melt the semisweet chocolate chips and coconut oil (or butter) together in 20-30 second intervals, stirring after each, until smooth. Drizzle the melted chocolate over the cooled cookies or dip the edges into the chocolate for a decorative touch.
