Instructions
- Preheat the oven: Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Make the crust: Combine chocolate cookie crumbs, sugar, and melted butter. Press into pan and bake.
- Prepare the filling: Beat cream cheese, sugar, and vanilla. Add eggs, sour cream, and heavy cream. Pour over crust and bake.
- Make the mousse topping: Heat cream, add chocolate, then cool. Beat with sugar and vanilla until fluffy.
- Assemble: Spread mousse over cheesecake and refrigerate.
