Cheesecake Filling:

- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup semi-sweet chocolate chips, melted and slightly cooled
- 1/2 cup strawberry preserves or strawberry puree
- Fresh strawberries for garnish
Instructions
- Prepare the Crust: Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan. Mix chocolate cookie crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes.
- Make the Cheesecake Filling: Beat cream cheese until smooth, then add sugar, eggs, sour cream, and vanilla. Pour half of the batter over the crust.
- Create the Swirl: Drizzle melted chocolate and strawberry preserves over the batter, swirling gently. Repeat with remaining batter, chocolate, and preserves.
- Bake: Place the pan in a water bath and bake for 50-60 minutes. Cool in the oven before refrigerating for at least 4 hours.
- Serve: Garnish with fresh strawberries before slicing and serving.
