For the cinnamon-sugar coating:

For the peaches & cream sauce:

  • 2 ripe peaches (peeled and diced)
  • ¼ cup granulated sugar
  • ¼ teaspoon cinnamon
  • 1 teaspoon lemon juice
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Make the waffles: Preheat your waffle iron. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. In another bowl, whisk the eggs, milk, melted butter, and vanilla. Pour the wet ingredients into the dry and stir until just combined. Cook the waffles according to your waffle iron’s instructions until golden and crisp.
  2. Make the cinnamon-sugar coating: In a shallow bowl, mix the sugar and cinnamon. Brush each warm waffle with melted butter and immediately dip or sprinkle with cinnamon sugar to coat.
  3. Make the peaches & cream sauce: In a small saucepan, combine the diced peaches, granulated sugar, cinnamon, and lemon juice. Cook over medium heat for 5–7 minutes until the peaches soften and form a syrupy sauce. In a bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  4. Assemble: Serve warm churro waffles topped with a generous spoonful of peach sauce and a dollop of whipped cream.
