For the Cilantro Lime Grilled Chicken:
- 4 boneless, skinless chicken breasts
- ¼ cup olive oil
- ¼ cup fresh lime juice
- 2 teaspoons lime zest
- 2 cloves garlic, minced
- ¼ cup chopped fresh cilantro
- 1 teaspoon honey
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Strawberry Salsa:
- 1½ cups fresh strawberries, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- 1 tablespoon lime juice
- Salt to taste
Instructions
- Marinate the Chicken: In a medium bowl, mix olive oil, lime juice, lime zest, garlic, cilantro, honey, salt, and pepper. Marinate chicken in this mixture for 30 minutes to 4 hours.
- Prepare the Strawberry Salsa: Combine strawberries, red onion, cilantro, jalapeño, lime juice, and salt. Chill until serving.
- Grill the Chicken: Grill marinated chicken for 5–7 minutes per side until fully cooked. Rest for 5 minutes before slicing.
