Ingredients

For the crust:

1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, 6 tablespoons unsalted butter (melted)

For the cinnamon swirl:

1/3 cup brown sugar, 1 tablespoon all-purpose flour, 1 tablespoon ground cinnamon, 2 tablespoons unsalted butter (melted)

For the cheesecake filling:

3 (8 oz) packages cream cheese (softened), 1 cup granulated sugar, 1/2 cup sour cream, 3 large eggs, 1 tablespoon vanilla extract

For the glaze:

1/2 cup powdered sugar, 1–2 tablespoons milk, 1/4 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C) and line the bottom of a 9-inch springform pan with parchment paper.
  2. Make the crust: Mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press firmly into the pan and bake for 10 minutes.
  3. Prepare the cinnamon swirl: Combine brown sugar, flour, cinnamon, and melted butter to form a paste.
  4. Make the cheesecake filling: Beat cream cheese until smooth, add sugar, sour cream, vanilla, and eggs. Pour half of the batter over the crust.
  5. Add cinnamon swirl: Drop spoonfuls of the cinnamon mixture over the batter and swirl gently with a knife. Repeat with the remaining batter and swirl.
  6. Bake: Bake for 50–60 minutes, then cool in the oven. Refrigerate for at least 4 hours.
  7. Prepare the glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over chilled cheesecake before serving.
