Instructions
- Prepare the baking surface. Line a baking sheet with parchment paper or a silicone baking mat to ensure the toffee won’t stick once poured.
- Cook the toffee. In a heavy-bottomed saucepan over medium heat, combine the butter, sugar, and salt. Stir constantly as the butter melts and the mixture begins to boil. Continue stirring for about 10–12 minutes until the toffee turns a deep golden amber color and reaches 300°F (149°C) on a candy thermometer, which is the hard crack stage.
- Add vanilla and pour. Remove the saucepan from heat and carefully stir in the vanilla extract. Immediately pour the hot toffee onto the prepared baking sheet and spread it into an even layer using a spatula.
- Top with chocolate and nuts. Sprinkle the semi-sweet chocolate chips evenly over the hot toffee. Let them sit for 1–2 minutes until melted, then spread the chocolate smoothly over the toffee. Sprinkle with the chopped toasted almonds or pecans and festive sprinkles if desired.
- Cool and break. Allow the toffee to cool at room temperature for several hours, or refrigerate for faster setting. Once completely firm, break the toffee into bite-sized pieces and store in an airtight container.
