Main Meatloaf:
- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 1/2 cup whole milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
For the glaze:
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the meat mixture: In a large bowl, combine breadcrumbs and milk, then add the ground beef, onion, garlic, eggs, ketchup, Worcestershire sauce, mustard, salt, pepper, and thyme. Mix until just combined—do not overmix.
- Shape and bake: Shape the meat mixture into a loaf shape on the prepared baking sheet or press into a loaf pan. Whisk together the glaze ingredients, spread half over the top of the meatloaf, and bake for 40 minutes. Brush the remaining glaze over the top and bake for another 15–20 minutes or until the internal temperature reaches 160°F (71°C).
- Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- Use ground turkey or a beef/pork mix if desired.
- Leftovers make great sandwiches the next day.
- You can also add 1/2 cup grated carrot or zucchini for extra moisture.
