Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, cream together butter and sugars until light and fluffy. Beat in vanilla, pumpkin, and egg until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to wet mixture, mixing until just combined. Fold in chocolate chips.
  5. Bake: Drop rounded tablespoons of dough onto prepared baking sheet. Bake for 10–12 minutes until edges are lightly golden.
  6. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
