Instructions

  1. Prepare Egg Mixture: Whisk egg yolks and sugar in a heatproof bowl over simmering water until thick and pale. Let cool.
  2. Whip Cream: Whip heavy cream to stiff peaks in a separate bowl.
  3. Combine Mixtures: Beat mascarpone until smooth, then fold in egg mixture and whipped cream.
  4. Layer Ladyfingers: Dip ladyfingers in espresso mixture and layer in a dish.
  5. Add Filling: Spread half of the mascarpone mixture over ladyfingers, repeat layers, and refrigerate.
  6. Finish: Dust with cocoa powder and garnish with chocolate shavings before serving.
