- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 can (28 oz) crushed tomatoes
- 2 cups low-sodium vegetable broth
- 1 teaspoon sugar (optional, to balance acidity)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
Finishing Touches:
- 1/2 cup plain Greek yogurt or light cream
- Chopped fresh basil for garnish (optional)
Instructions
- Prepare Base Soup: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened. Stir in garlic and tomato paste, cook until fragrant. Add crushed tomatoes, broth, sugar, salt, pepper, basil, and oregano. Bring to a gentle boil, then simmer for 15–20 minutes.
- Blend and Finish: Remove from heat and blend the soup until smooth. Stir in Greek yogurt or light cream for creaminess. Reheat gently if needed. Serve hot, garnished with fresh basil.
