Cookie Dough:
- 1/2 cup unsalted butter (softened)
- 4 oz cream cheese (softened)
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar (packed)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Additional Ingredient:
- 1 1/2 cups sweetened shredded coconut
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix Wet Ingredients: In a large mixing bowl, beat the butter and cream cheese until smooth. Add in granulated sugar and brown sugar, beat until light and fluffy. Mix in the egg, vanilla extract, and coconut extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Add Coconut: Fold in the shredded coconut.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheets. Flatten slightly and bake for 10–12 minutes until lightly golden.
- Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra coconut flavor, consider toasting some of the coconut before mixing it into the dough.
