Instructions

  2. Wet Ingredients: In another bowl, whisk the egg, coconut cream, milk, melted butter or coconut oil, and vanilla extract until smooth.
  3. Combine: Pour the wet ingredients into the dry ingredients and gently stir until just combined; do not overmix. Let the batter rest for 5–10 minutes while heating a nonstick skillet or griddle over medium heat.
  4. Cook: Lightly grease the skillet with butter or coconut oil. Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface and edges look set. Flip and cook another 1–2 minutes until golden brown and cooked through. Repeat with remaining batter.
