Optional:
- 1/3 cup mini chocolate chips
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the coconut flour, baking soda, and salt.
- Combine wet ingredients: In a separate bowl, whisk melted coconut oil, maple syrup or honey, eggs, and vanilla extract until smooth.
- Combine dry and wet ingredients: Stir the dry ingredients into the wet mixture until a thick dough forms. Let the dough rest for 2–3 minutes to allow the coconut flour to absorb moisture.
- Add optional chocolate chips: Fold in chocolate chips if using.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, and slightly flatten onto the baking sheet. Bake for 10–12 minutes until edges are golden and centers are set.
- Cool and serve: Cool on the baking sheet for 5 minutes before transferring to a wire rack.
