- 1 tablespoon honey
- 1/2 teaspoon ground ginger
- salt and black pepper to taste

- 1 cup jasmine or basmati rice

Instructions
- Marinate the Chicken: In a medium bowl, whisk together coconut milk, lime juice and zest, garlic, soy sauce, honey, ginger, salt, and pepper. Marinate the chicken for at least 30 minutes.

- Make the Sauce: Simmer the reserved marinade in the skillet until slightly thickened. Return the chicken to the skillet and coat with the sauce.
