Broth and Flavorings:

  • 4 cups fish stock or chicken broth
  • 1 (14-ounce) can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • juice and zest of 2 limes

Veggies and Herbs:

  • 1 red bell pepper, thinly sliced
  • 1 cup sliced mushrooms
  • 2 cups baby spinach
  • 1 small bunch fresh cilantro, chopped
  • 1 small red chili, thinly sliced (optional)

Seasonings:

  • salt and pepper to taste
  • lime wedges for serving

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Sauté onion until softened, about 5 minutes. Add garlic and ginger, cook for another minute.
  2. Add Broth and Flavorings: Pour in fish stock, bring to a boil. Add coconut milk, fish sauce, soy sauce, lime juice, and zest. Simmer.
  3. Cook Veggies and Fish: Add bell pepper and mushrooms, cook for 5 minutes. Add fish, simmer until cooked through. Stir in spinach.
