  • 1 tablespoon coconut oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Spices:

  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili flakes (optional)

Additional Ingredients:

  • 1 cup red lentils, rinsed
  • 1 can (13.5 oz) coconut milk
  • 2 cups vegetable broth or water
  • 1/2 teaspoon salt (or to taste)
  • 1 tablespoon lime juice
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat coconut oil: In a large saucepan, heat coconut oil over medium heat.
  2. Sauté onion: Add diced onion and sauté until soft and translucent, about 5 minutes.
  3. Add aromatics and spices: Stir in garlic, ginger, cumin, turmeric, coriander, and chili flakes (if using). Cook for 1–2 minutes until fragrant.
  4. Cook lentils: Add rinsed lentils, coconut milk, and vegetable broth. Bring to a boil, then simmer uncovered for 20–25 minutes until lentils are soft and dahl is thick.
  5. Season and garnish: Season with salt, stir in lime juice, and let sit for a few minutes. Garnish with cilantro and serve with rice or flatbread.
